The Iberian hams are considered as one of the best options to pair with a great quality sparkling wine, in roder to achieve top level food pairings. MONTEPARRA is a family business founded in the second half of the NINETEENTH century, located in the town of Salamanca, GUIJUELO. The company is protected by the D.O. Guijuelo and prepares hams and iberian sausages through the hands of craftsmen and the extensive knowledge of this family. On their own farm, the farm MOUND, the Iberian pigs are bread in freedom on acorns, grasses and cereals, controlling the cycle of the animal.


The tour begins in the vineyards of the finca Nadal of Boadella, some of which are more than 65 years. The farmhouse, the winery and the cava, which were founded in 1943, are located in the center of the finca.
We continue the journey through the main stages of the process of preparation of the quality sparkling wine.
We will visit the cava at more than 20m depth, where we look to stand the bottles and we are witnessing the second fermentation.
